The cafetière is one of the easiest ways to brew a consistently satisfying cup at home

Method

To brew 1 cup of coffee, you need 15g of coffee and 250ml water.
To brew 2 cups of coffee, you need 30g of coffee and 500ml water.

Step1: Heat the water
Bring 500 milliliters of filtered or bottled spring water (35–85 PPM) to 94–96°C. If you don't have a thermometer, boil the kettle and leave it to rest for 30 seconds to bring it to the right temperature.

Step 2: Pre-warm the cafetière
Pour a small amount of hot water into the empty cafetière and swirl it around, then discard. This pre-warms the glass and helps maintain a stable brew temperature.

Step 3: Add the coffee
Add 30 grams freshly ground coffee to the cafetière. Place it on your scales and tare to zero.

Step 4: Bloom the coffee
Pour the hot water slowly over the grounds, making sure everyone is fully saturated, then start your timer.

Step 5: Leave the coffee to brew
Leave the coffee to steep for 4 minutes undisturbed. Once the time is up, break the crust that has formed on the surface with a gentle stir, then leave it to rest for a further 5 minutes, this allows the grounds to sink and settle to the bottom.

Step 6: Plunge and pour
Place the lid on and press the plunger down slowly and steadily. A little resistance is perfectly normal. Pour straight into your cup and enjoy.

The result is a wonderfully clean, full-bodied cup with a pure, sharp flavour that speaks for itself.

Always pour immediately after pressing. Leaving brewed coffee on the grounds turns it bitter within minutes. Filtered or bottled spring water at 35–85 PPM gives the cleanest, most balanced flavour.
